My first flop


It's Monday, so maybe that explains it. Lucky I made two things today. And, before you get bored with my baking, there was a migration through this area today of thousands and thousands of yellow butterflies. They were not here, but up in the mountains right around here. It went on for hours until the afternoon rains started. I saved a picture from the info I read on one of the Costa Rica blogs I belong to.
Back to baking. Most things here don't come in large packages so when I decided to make Mounds Bars this morning I had to make a quick run for more coconut. I had 2 cups and I need 3. My son in law, Kent, loves these so I know he is heading for the airport. Kent and my daughter, Heather, are so smart. I gave them my pass codes and they do their best to keep me sounding literate. For instance, he advised me that plumas means pens besides meaning feather so that is why Gerardo might have been confused about what I wanted. Also, mucho should have been muchas. What would I do without them!
Back to baking. So you mix coconut and sweetened condensed milk and form it into logs and freeze it. Then you dip it in melted chocolate. Those turned out just fine. It was the sugar cookies I had a problem with. I think I might have to stop using recipes off Facebook. I have about the same luck as buying swimsuits from the sites listed there. That is a whole other story and I am saving the swimsuit for some 6 year old who needs it.
Anyway the recipe is from like 1930. Nothing unusual about the ingredients. The only thing I substituted was butter for shortening. Now granted I don't have a mixer yet but first I I creamed the butter and then I added the other stuff and creamed that in. I mixed it up very good. Then I chilled it. You then roll it into balls- a good idea I thought since I don't have a rolling pin yet - and dip it half way in water then in sugar. 350 for 10 minutes. I had 12 cookies in the first batch and they were soft and floppy after 10 minutes and all run together - kinda one big cookie. So I did 9 cookies and I gave them a few extra minutes the next batch. So I turned the oven up. I think I have 4 good cookies out of 40. I took all the floppy cookies and put them back in the oven for another 10 minutes. I decided I will save these for dog treats since there shouldn't be anything in them to harm the dogs. I think my next baking day I will try it again with shortening. 

Tomorrow I am due to go back to Cartago to get my herbs. Hopefully the weather will cooperate and I can find the place. I want to get natural type string for my bamboo dream catchers. I think the ones I made will make some really interesting ones. I will have Gerardo cutting down bamboo all over the place. I won't be stopping at Wal Mart this time but the Paraiso Plaza looked pretty interesting so I may make a stop there. And hit the Basilica this time. The first weekend in August is a major pilgrimage to the Basilica and people come from all over and camp in the square in front of the church. They walk to Cartago and then crawl from the back of the church to the altar.
